Warped wooden cutting board: how to get it straight again

A wooden cutting board warps when one side absorbs more moisture or dries faster than the other. You can often get a slight warp out again: dampen the concave side, lay the board with that side down under a weight and let it dry slowly. Then oil it on all sides.

Wood moves. It expands when it absorbs moisture and shrinks when it dries. If that happens equally on both sides, you do not notice anything. If it happens on one side, the board warps.

What makes a board warp?

  • Drying it flat. The top dries in the air, the underside stays wet on the worktop.
  • Soaking or the dishwasher. The wood soaks itself full and then dries unevenly.
  • Heat from one side. Next to the cooker, on the radiator or in full sun.
  • Oiling only one side. The oiled side absorbs less moisture than the bare side.

Fixing a slight warp

  1. Check which side is concave. Lay the board on a flat surface: you will see straight away which side curves up or down in the middle.
  2. Dampen the concave side with a wet, well wrung-out cloth. That side has shrunk too far and needs to expand a little again.
  3. Lay the board with the concave side down on a damp cloth on a flat surface.
  4. Put a weight on it, for example a stack of heavy books, evenly spread.
  5. Leave it overnight and check the next day. Repeat if needed.
  6. Then leave the board to dry upright and oil it on all sides, including the edges.

This works for a slight warp. A board that is badly warped or cracked usually cannot be made flat again.

Frequently asked questions

Does a thick board warp less easily?

Yes. The thicker the wood, the more stable it is. Our butcher block is 6 cm thick and so stays flat, even with heavy use. The cutting boards are 3 cm.

My board wobbles a little. Is that a problem?

A slight wobble is mainly awkward when cutting. Put a damp cloth underneath so it lies still and try to get the warp out with the steps above.

Can I straighten the board in the oven or with a hairdryer?

Better not. Quick heat dries the wood out unevenly and can make it crack. Drying slowly under a weight is safer.

Do I need to oil the underside too?

Yes. If you only oil the top, you make the two sides uneven. Oil the underside and the edges every time as well.
